Ingredients
For the Salad
- 2 c shredded red cabbage
- 1/4 leek (the white part)
- 1 carrot
- 1/2 head of Romaine lettuce
For the Dressing
- Zest and juice of one lemon
- 1 garlic clove
- 1 pinch sea salt
- 3 tbsp. extra virgin olive oil
- 1/4 c mixed raw seeds, or raw seeds of your choice
Instructions
For the Salad
- Thinly shred the cabbage, leek and carrots using a mandolin. With a sharp knife, slice green salad.
- Mix all the vegetables together.
For the Dressing
- For the dressing, grind lemon zest and combine it with the lemon juice, garlic, sea salt, and olive oil. You can add raw apple cider vinegar, if you like.
- Top the salad with the dressing and toss it with raw seeds.
