Ingredients

For the Avocado Smash

  • 2 large ripe avocados
  • 1 lime, juiced
  • 1 small jalapeño pepper, seeded and finely diced
  • 1 handful finely chopped cilantro
  • 1 garlic clove, minced (optional)
  • sea salt and fresh black pepper, to taste

For the Wraps

  • 1 bundle collard greens (about 5 large leaves)
  • 1 large red bell pepper, thinly sliced
  • 1 large cucumber, cut into matchsticks
  • 2 carrots, julienned
  • 2 c red cabbage, shredded
  • 1 c broccoli sprouts or alfalfa sprouts
  • sea salt and fresh black pepper, to taste

Instructions

  1. Mash the avocado in a bowl and then add the rest of the Avocado Mash ingredients. Mix everything up and set aside while you prepare the wraps.
  2. Cut out the thick stems of the collard green leaves. You\'ll be able to make two wraps per leaf.
  3. Spread about one tablespoon of the avocado mash in the center of each leaf. Layer the bell pepper, cucumber, carrots, red cabbage, and sprouts. Season with sea salt and pepper before rolling them up.
  4. Lay the wraps seam side down on your plate and then enjoy.
