Ingredients
For the Salad
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 poblano pepper, diced
- 1 jalapeno pepper, diced (optional)
- 1 c cherry tomatoes, halved
- 2 few celery stalks, sliced
- 1/2 bunch asparagus
- 1 c red onion, chopped
- 1/2 english cucumber, chopped
- chopped parsley & cilantro
- chopped avocado (optional)
For the Dressing
- 3/4 c filtered water
- 2 tbsp. extra virgin olive oil
- 1 avocado, pitted and skin removed
- 1 green onion, sliced
- 1 tbsp. fresh cilantro
- 1 garlic clove
- 1 tbsp. fresh lime juice
- 1/4 tsp. lime zest
- 1/4 tsp. of each sea salt, black pepper, cumin, and chili powder
Instructions
- After prepping all of your vegetables, add them to a large bowl and mix well. If you want to serve a couple people, you can then divide the veggies into separate bowls.
- Blend all of the dressing ingredients together in a blender. Drizzle the desired amount of dressing over the salad and mix well. Enjoy!
