That’s right, folks. You can make a salad without lettuce. The great thing about this salad is that it is very colorful, meaning you are going to be getting a variety of nutrients and antioxidants. Remember to always include a lot of colors in your salads!

Ingredients

For the Salad

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 poblano pepper, diced
  • 1 jalapeno pepper, diced (optional)
  • 1 c cherry tomatoes, halved
  • 2 few celery stalks, sliced
  • 1/2 bunch asparagus
  • 1 c red onion, chopped
  • 1/2 english cucumber, chopped
  • chopped parsley & cilantro
  • chopped avocado (optional)

For the Dressing

  • 3/4 c filtered water
  • 2 tbsp. extra virgin olive oil
  • 1 avocado, pitted and skin removed
  • 1 green onion, sliced
  • 1 tbsp. fresh cilantro
  • 1 garlic clove
  • 1 tbsp. fresh lime juice
  • 1/4 tsp. lime zest
  • 1/4 tsp. of each sea salt, black pepper, cumin, and chili powder

Instructions

  1. After prepping all of your vegetables, add them to a large bowl and mix well. If you want to serve a couple people, you can then divide the veggies into separate bowls.
  2. Blend all of the dressing ingredients together in a blender. Drizzle the desired amount of dressing over the salad and mix well. Enjoy!
