Ingredients
- 1/2 c packed sun-dried tomatoes (soaked in enough water to cover)
- 3/4 c raw cashews
- 1 c tomatoes, diced
- 1 garlic clove, minced
- 3/4 tsp. sea salt
- 1/2 tsp. onion powder
- 2 tbsp. nutritional yeast
- 1 tsp. raw apple cider vinegar
- 1/4 tsp. chipotle chile powder
Instructions
- Blend all ingredients in a food processor or high-speed blender until smooth. Keep some extra sun-dried tomatoes to slice up for topping.
- Top the dip with the sliced sun-dried tomatoes and enjoy with some fresh vegetable sticks.
