They had vegan and vegetarian options, so we tried two breakfasts, two lunches, and two dinners, all of which are reviewed below.
Breakfast
Raspberry Coconut Loaf
This is a perfect portion for those who don’t want to eat a lot in the morning. Accompany this gluten-free, dairy-free loaf with a banana and you’ll be fully energized. If you want to keep your sugar intake down, this is the breakfast for you. If you need a little extra sweetness, drizzle a little grade A maple syrup on top.
Golden Raisin Almond Oatmeal
This fiber-rich bowl helps to keep you satiated for hours! The golden raisins add a touch of sweetness and you get a surprise crunch in every bite from the almond slivers. The inherent flavors of both the almond and coconut milks come through as well. We doctored it up by mixing in a little cinnamon powder, grade A maple syrup, sliced bananas, and some strawberries and blueberries.
Lunch
Green Pasta Salad
The creamy dressing on this pasta salad complemented the freshness of the ingredients quite nicely. We loved the different textures, from the crunchy tartness of the apple to the softness of the thinly sliced cabbage. This dish actually is reminiscent of coleslaw. The only downside was that the pasta was undercooked and crunchy.
Summer Squash Cauliflower Quinoa
This is a perfectly portioned meal to fill you up for lunch. Don’t worry about a lack of protein because you will get a healthy dose from the quinoa and broccoli. Quinoa is a tricky ingredient because it demands seasoning to avoid blandness. This dish had seasoning, but it would be improved with more spices or a sauce.
Dinner
Mushroom Aioli Brown Rice With Tofu
You have to love tofu in order to enjoy this meal. The mushroom rice was flavored nicely, but the piece of tofu was a little too large for the amount of seasoning that was on it. It may have also benefited from being marinated or having its own sauce.
Sweet Bean Curry
This was our favorite dish of the ones we received from Fresh N Lean. The sauce packed bold flavors and it proved to be a satisfying meal. If you are new to chickpeas, this dish will help you learn to love them.
