While peaches, nectarines, cherries, apricots, and plums receive a lot of attention during summer, watermelon is deserving of that same love. It’s the classic summer fruit! How can you ignore it? Cutting up watermelon to snack on is a classic summer snack, so why not take it to the next level with this simple yet scrumptious slush?

Ingredients

  • 8 c watermelon, cubed
  • 1/3 c organic raw honey
  • 1 lime, juiced

Instructions

  1. Add all of the ingredients to a blender and blend for 30 seconds to yield a smooth puree.
  2. Pour this watermelon mixture into a 9x9 or 9x13 pan, and place it in the freezer for one hour.
  3. Remove the pan from the freezer and scrape the frozen areas with a fork. Place this back in the freezer and remove every couple hours to scrape the frozen areas until it is a slush-like consistency (similar to shaved ice).
  4. To serve, remove the watermelon mixture from the freezer and scrape it up with a fork. Spoon into a bowl and serve with an optional lime wedge.
