Ingredients
For the Tacos
- 2 c cooked lentils
- 2 tsp. olive oil
- 1/2 c onion, diced
- 2 garlic cloves, minced
- 1/2 c bell peppers, diced
- 1 tbsp. jalapeno, finely diced (optional)
- 1/2 c grape tomatoes, halved
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. smoked paprika
- 8 six-inch corn tortillas (or you can use lettuce leaves for taco shells)
Optional Toppings
- avocado slices
- 2 tbsp. cilantro, diced
- 1/4 c tomatos, diced
Instructions
- Warm the olive oil in a frying pan over medium heat. Add the onions, garlic, and peppers to the pan and cook for about 3-5 minutes, stirring occasionally.
- When the onions are translucent, add the tomatoes, cooked lentils, and all the spices. Stir the mixture frequently while you cook it for another 5 minutes. Remove from the heat.
- Heat the tortillas on a dry pan over medium heat for about a minute on each side. Prepare your desired toppings.
- Assemble your tacos by adding about 1/4 cup of the lentil mixture into each tortilla. Add the toppings and enjoy!
