Ingredients
For the Soup
- 1 medium head of broccoli
- 1 (14 oz) can coconut milk
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- 1/2 tsp. curry powder
- a pinch of oregano
Optional Toppings
- crushed macadamias
- parsley, chopped
- avocado, diced
Instructions
- Roughly chop the head of broccoli into florets and place it in a saucepan with the coconut milk over over medium-high heat. Bring to a boil and then reduce the heat to simmer for 5 minutes.
- Remove the pan from the heat and let it cool for a couple minutes. Pour this into a blender and pulse until you get a smooth consistency.
- Transfer the soup back to the saucepan and place over medium heat. Stir in the sea salt, pepper, curry powder, and oregano. Remove from heat and serve.
- Top with whatever toppings you desire.
