If you feel like being alone with a dessert and indulging like nobody is watching, this recipe is for you. Dessert for one is ready with this gingerbread cake in a jar. Just make sure that your jar is oven safe because you don’t want shattered glass in your oven.

Ingredients
- 1/2 tsp. blackstrap molasses
- 1 tsp. ground cashews
- 1 tbsp. buckwheat flour
- 1/8 tsp. baking powder
- pinch baking soda
- 1/2 tsp. flax meal
- 2 tbsp. brown sugar
- 1/8 tsp. ginger powder
- 1/8 tsp. ginnamon powder
- pinch ground cloves
- 2 tsp. coconut milk
- 1 tsp. coconut oil, melted
- 1 drops of lemon juice
Instructions
- Preheat your oven to 375º F.
- Pour the molasses into the bottom of an oven-safe glass jar and spread it around.
- In a mixing bowl, whisk all of the ingredients, except the coconut milk and coconut oil, until everything is well combined.
- Add the coconut milk and coconut oil to the boil, in addition to the optional drops of lemon juice, and mix well. Dump this mixture into the jar.
- Mix well in the jar to incorporate the molasses, or else the molasses will harden at the bottom during the baking process.
- Place the jar in the oven and bake for about 18-20 minutes. Remove when ready, allow it to cool slightly, and enjoy your dessert for one!
