Ingredients
For the Salad
- 2 c kale, chopped
- 1 c pomegranate arils
- 1/4 c almonds, roughly chopped
- 1/2 c raw hemp seeds
For the Dressing
- 1/2 c shallot, diced
- 2 tbsp. extra virgin olive oil
- 2 tbsp. filtered water
- 2 tbsp. grade A maple syrup
- 1 tbsp. apple cider vinegar
- 1/2 tsp. sea salt
- juice of 1/2 lemon
Instructions
For the Salad
- Rinse and massage the chopped kale before you do anything else. This helps to soften the leaves and makes them feel less fibrous when you eat them.
- Add the massage kale leaves to a large salad bow and mix in the pomegranate arils, almonds, and hemp seeds. Set aside while you make the dressing.
For the Dressing
- Add all of the ingredients to a blender and blend until smooth.
- Pour your desired amount of dressing over the salad and toss to coat all of the ingredients in dressing. Any leftover dressing can be stored in the fridge in an airtight container for up to five days.
