Quinoa is one of the few plant-based foods that contains all nine essential amino acids, which the body cannot produce on its own. It’s also rich iron, fiber, magnesium, potassium, phosphorus, and more! Add the avocados, tomatoes, bell peppers, and spinach into the equation, and you’ve got yourself a superfood salad that is great for the several days after you finish cleansing.

Ingredients

For the Salad

  • 1/2 c uncooked quinoa, rinsed and drained
  • 1 c flltered water
  • 2 Roma tomatoes, diced
  • 1/2 spinach, chopped
  • 1/3 red onion, finely chopped
  • 1 ripe avocado, pitted, peeled, and chopped
  • 1/2 c red bell pepper, chopped

For the Dressing

  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. freshly squeezed lemon juice
  • 1/2 tsp. sea salt
  • pinch of black pepper

Instructions

For the Salad

  1. In a medium saucepan over medium-high heat, add the quinoa and water. Bring to a boil and then reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa has absorbed the water.
  2. Transfer the cooked quinoa to a medium bowl and add the tomato, spinach, onion, avocado, and bell pepper. Mix to combine and set aside while you make the dressing

For the Dressing

  1. Whisk all the ingredients in a small bowl.
  2. Drizzle the dressing over the salad and toss to ensure that all the ingredients are coated. Serve and enjoy.

Notes

1. Rinse quinoa thoroughly before cooking to remove a bitter substance called saponin that coats the seeds.

2. Brush avocado slices with additional lemon juice to prevent browning.
