Ingredients
- 1 avocado, peeled and pitted
- 1/4 c raw pistachios (plus more for garnish)
- 5 tbsp. grade A maple syrup
- 5 tbsp. water
- 1 1/2 tsp. alcohol-free vanilla extract
- 1 tsp. freshly squeezed lemon juice
- 1/8 tsp. sea salt
Instructions
- Add all of the ingredients to a high-speed blender or food processor and blend until smooth. You may need to stop blending, scrape down the sides, and continue blending to fully incorporate the ingredients.
- Spoon the blended mixture into two small jars, cover, and refrigerate for about 30 minutes to chill before serving.
- When ready to enjoy, garnish with extra raw pistachios or some coarse sea salt.
