Ingredients
For the Salad
- 6 c kale, stems removed and thinly sliced
- 1 c Fuji apple, seeded and cut into matchsticks
- 1 c avocado, peeled, pitted, and cubed
- 1/2 c pomegranate arils
- 1/2 c raw pecans
For the Dressing
- 4 tbsp. extra virgin olive oil
- 2 tbsp. freshly squeezed lemon juice
- 1 tbsp. grade A maple syrup
- 1/2 tsp. mustard powder
- 1/2 tsp. sea salt
- 1/8 tsp. black pepper
Instructions
For the Salad
- Make sure to thoroughly rinse the kale leaves and remove the stems before you thinly slice them.
- Add the thinly sliced leaves and the remaining salad ingredients to a large bowl and toss gently to combine. Set aside while you prepare the dressing.
For the Dressing
- Add all of the ingredients to a bowl and whisk to combine. Alternatively, you can add all of the ingredients to a small jar, screw on the lid, and shake well to combine.
- Pour the dressing over the salad and toss to coat all of the ingredients. Serve and enjoy immediately.
