Ingredients
- 2 c fresh cranberries
- 2 tbsp. chia seeds
- 1/4 c water
- 1/4 c grade maple syrup
- 1 tsp. vanilla extract
Instructions
- Add all of the ingredients (except the chia seeds) to a saucepan over medium heat and cook until the cranberries begin to burst. This should take about six to eight minutes. Make sure to stir occasionally.
- Once the cranberries start to burst, use the back of a spoon or potato masher to break the rest of them up, and then remove from heat.
- If you prefer your jam to be smooth, you can transfer the cooled mixture to a food processor and blend until smooth. If you like it chunky, then skip that step.
- Transfer the mixture to a large mason jar and stir in the chia seeds. Cover the jar and place in the fridge to set overnight. Enjoy in the morning!
