Fortunately for you, this recipe is very easy to prepare and will give you two portions of breakfast that you can enjoy within three days of making the recipe.

Mornings are busy for everyone. Whether you have to wake up early for a long commute or scramble around the house getting the little ones ready for school, you don’t want to add more to your plate. Give yourself a helping hand by having your breakfast ready to go! When your breakfast is ready to go, you don’t have to skip breakfast or stop at a fast food establishment. Instead, you have a nutritious, filling breakfast that you can enjoy on the go with this blueberry chia pudding.

In an ideal world, you could enjoy this chia pudding at the dining table while sipping some tea or reading the paper. Since you probably don’t have the luxury of relaxing in the morning, you may need to take this pudding to go. If you want to jazz it up before you eat it, consider topping it with mixed berries or chopped bananas. Chopped raw almonds also make a great topping because they add a nutty flavor and crunchy texture.

Raw Vegan Blueberry Chia Pudding

Ingredients

  • 1/4 c blueberries
  • 1 c homemade almond milk
  • pinch of cinnamon
  • 2 tsp. grade A maple syrup
  • 1/3 c raw chia seeds

Instructions

  1. Add the blueberries, homemade almond milk, cinnamon, and maple syrup to a blender or food processor and blend until smooth.
  2. Transfer this mixture to a mixing bowl and, while whisking, pour in the chia seeds to incorporate. Let it sit for five minutes.
  3. After five minutes, whisk the pudding one more time to make sure that there are no clumps of chia seeds. Divide the mixture into two jars or containers and place in the fridge. Allow it to set for a minimum of five hours, but preferably overnight.
  4. Remove from the fridge and top with optional mixed berries, bananas, or chopped raw almonds.
