Ingredients
For the Salad
- 5 c spinach
- 2 nectarines, pitted and thinly sliced
- 1/2 c walnuts, chopped
- 1/2 c vegan feta cheese
For the Dressing
- 1/4 c fresh basil leaves
- 2 tbsp. balsamic vinegar
- 3 tsp. maple syrup
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- 6 tbsp. extra virgin olive oil
Instructions
For the Salad
- Add all of the ingredients to a large salad bowl and toss gently to combine.
- Set aside while you prepare the dressing.
For the Dressing
- Add all of the ingredients, except for the olive oil, to a blender and blend to combine.
- With the blender on low, open the top of the blender, drizzle the olive oil in, secure the top again, and then blend until smooth.
- Pour the dressing over the salad and toss to coat all of the ingredients. Serve and enjoy.
