It’s taco time! And that is excellent news for anyone who is on a raw vegan diet because tacos are easy to make and very filling. Many people think that raw vegan tacos take forever to make, but you can have a full plate of raw tacos in under 20 minutes. Plus, this recipe requires less than 10 ingredients so you know it will come together quickly.
In the past, we published several raw taco recipes with walnut “meat” and “mushroom.” This recipe unites these two ingredients and the result is a taco filling that’s meatier than ever. Portobello mushrooms have a natural meaty texture, and walnuts reach that consistency after a few pulses in the food processor. When you pulse both mushrooms and walnuts in the food processor, you get a consistency similar to ground beef. And the flavor is reminiscent of the taco meat you know and love.
The best way to intensify the taco flavor in the “meat” is to let it sit for about 30 minutes before serving. The flavors get to know each other and form a harmonious marriage that elevates the tacos. You are free to add the raw vegan toppings that you enjoy, for example, avocado slices, cilantro, or tomatoes. Ingredients
For the Walnut Mushroom Meat
- 1 c raw walnuts
- 2 1/2 c portobello mushrooms, quartered
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. chili powder
- 1/4 tsp. paprika
- 1 tsp. cumin powder
- 1 tbsp. coconut aminos
For the Tacos
- 6 lettuce leaves
- 1/2 c tomatoes, diced
- 1 avocado, peeled, pitted, and sliced
- 1/4 c cilantro, chopped
- 1/4 c red onion, diced
- lime wedges (for serving)
Instructions
For the Walnut Mushroom Meat
- Add all of the ingredients to a food processor and pulse until the mixture resembles taco meat.
- Do not over-process the meat, otherwise you\'ll end up with a puree that is not as appetizing. A few pulses should be sufficient to thoroughly process and combine the ingredients.
- Spoon the walnut meat into a bowl, cover with plastic wrap, and let the flavors intensify for about 30 minutes.
For the Tacos
- While the flavors of the walnut meat are getting to know each other, prepare the rest of the taco toppings.
- You are free to add the toppings of your choice, provided they are cleanse approved. Otherwise, the tomatoes, avocado, cilantro, and red onion are the perfect toppings.
- Spoon the taco meat into each lettuce leaf. Top each taco with tomatoes, avocado, cilantro, and red onion, and then serve with lime wedges. Enjoy!
