The holiday season is all about the what? Not the sweets and stuffing, but the Brussels sprouts! We have seen an uptick in the popularity of Brussels sprouts within recent years. Classically, you roast Brussels sprouts, but you can 100% enjoy them raw. To balance the bitter flavor of Brussels sprouts, this salad contains sweet apples and dried cranberries for balance. And the dressing is acidic so you have bitter, sweet, tart, and acidic flavors that delight your palate with each bite.

Ingredients
For the Dressing
- 1/4 tsp. mustard powder
- 1 1/2 tbsp. raw apple cider vinegar
- 1/4 c olive oil
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
For the Salad
- 1 lb brussels sprouts
- 2 crisp apples, cored and thinly sliced
- 2 scallions, thinly sliced
- 1/4 c raw walnuts, chopped
- 1/4 c dried cranberries (no sulfur or added sugars)
- 1 tbsp. chopped parsley (optional)
Instructions
For the Dressing
- In a small bowl, add all of the ingredients and whisk to combine.
- Set aside while you prepare the salad.
For the Salad
- Rinse the Brussels sprouts and then trim the ends. Thinly slice each little bulb so that they look like baby shredded cabbages.
- Add the sliced Brussels sprouts and the remaining salad ingredients to a large bowl and mix to combine.
- Drizzle the dressing over the salad and toss to ensure that all the ingredients are coated.
- Serve and enjoy.
