Avocados have their place in desserts, people. The sooner you accept that, the more delicious your life will be. This dessert is 100% raw vegan and is 100% tangy, sweet, tart, and chewy all at once. It’s everything you want from a key lime pie made with healthy, all-natural ingredients.

Ingredients
For the Crust
- 2 1/2 c raw almonds
- 1/8 c coconut oil
- 1/3 c dates, pitted and roughly chopped
- 1 pinch sea salt
For the Filling
- 2 avocados, peeled, pitted, and chopped
- 1/2 c coconut oil
- 1 c raw cashews (soaked in water for 4 hours and then drained)
- 1/2 c raw agave syrup
- 4 limes, zested and juiced
- 1 pinch sea salt
Instructions
For the Crust
- Add all of the ingredients to a food processor and blend until you get a coarse consistency. It will start to come together and resemble a dough-like texture.
- Grease an 8x8- or 9x13-inch baking dish with a little coconut oil and press the crust into a thin, even layer. Put it in the freezer while you make the filling.
For the Filling
- Add all of the ingredients to a blender and blend until smooth. The mixture should be thick and creamy like pudding.
- Remove the dish with the crust and spoon the filling on top of the crust. You can either refrigerate for two hours or place in the freezer for 45 minutes.
- Once it has set, remove from the freezer, slice into small squares, top with optional lime zest, and enjoy.
