Banana Split Smoothie

INGREDIENTS

Two (2) bananas (organic, preferably)
Eight (8) ounces of crushed pineapple (drained)
One and one-fourth (1 1/4) cup of almond, rice, coconut, or soy milk
One-half (1/2) cup of strawberries (organic, preferably), fresh or frozen
Two (2) tablespoons maple syrup (grade B)
Six (6) ice cubes
One (1) scoop of So Delicious, Soy Dream, or Rice Dream vanilla ice cream

GARNISH

Whipped topping (Soy Whip)
Chocolate syrup (Ah!laska brand)
Maraschino cherries

DIRECTIONS

Combine bananas, pineapple, milk, strawberries and maple syrup in a blender. Blend until smooth, no lumps. Start adding ice slowly and blending until slushy. Pour into large glasses, preferably chilled then garnish with whipped topping, chocolate syrup, and maraschino cherries. The perfect banana split in a glass.

Banana Date Supreme Smoothie

INGREDIENTS

One cup Coconut Milk (or Almond or Rice milk)
One cup Dates (pitted), organic preferably
One Banana (sliced), organic preferably and not-so-ripe (due to sweetness)
One-half cup crushed ice (optional)/p>

DIRECTIONS

Pour coconut (or other) milk into blender. Next, add dates and banana slices to blender. Lastly, add ice to blender (optional). Puree until smooth.

Serves 1-2

Tropical Strawberry

INGREDIENTS

One cup frozen strawberries
One-half (1/2) cup pineapple
One-half (1/2) cup ripe papaya
One small peach
One-half (1/2) fresh, ripe avocado
One-half (1/2) cup apple juice
One-half cup (1/2) of pina colada juice
One-fourth (1/4) teaspoon coconut flavoring (optional)
One teaspoon lime juice (optional)

DIRECTIONS

Peel, seed and slice pineapple, papaya, peach, and avocado. Combine with strawberries, juices, and flavoring in the blender (or Vita-Mixer). Puree until smooth.

Serves 2-3

Fruity Sunrise Smoothie

INGREDIENTS

2 c. orange juice
1c. canned apricots with fruit juice
1 whole mango
1c. of almond milk, soymilk or rice milk
1/4 c. wheat germ(optional) 6-12 ice cubes

DIRECTIONS

Combine all ingredients in a blender and process until smooth. Pour into two large glasses or cup.

Polynesian Power Punch

INGREDIENTS

One-half (1/2) cup Light Coconut Milk (Lakewood or R.W. Knudsen brand)
One-half (1/2) cup Guava Nectar
One-half (1/2) cup Strawberry Sorbet (preferably Palapa Azul brand)
One and a half (1 1/2 ) cups hulled and quartered fresh strawberries (preferably organic)
One (1) cup diced Fresh Pineapple (frozen)

DIRECTIONS

Combine the coconut milk, guava nectar, and sorbet in a blender. Add strawberries and pineapple. Blend until smooth.

Maple Pecan Banana Swirl

INGREDIENTS

Two (2) frozen bananas
One-third (1/3) fresg pecans
One (1) tablespoon fresh flaxseed
Two (2) tablespoon maple syrup
Two to Three (2-3) teaspoon slippery elm powder
One (1) cup water (adjust as needed)

DIRECTIONS

In advance, peel fresh ripe bananas and freeze until hard. Grind pecans and flaxseed using an electric seed grinder (or coffee grinder). Break bananas into small chunks and combine with water, flax, nuts, sweetener and elm powder in your blender. Blend on high speed until smooth and creamy.

NOTE: Be sure to use fresh nuts (preferably organic) and Grade B maple syrup.

Apple Smoothie

INGREDIENTS

1-1/2 green apple, cut into small pieces
Pinch of salt
Vegan sugar, as desired
Ice cubes
1 teaspoon vanilla powder

DIRECTIONS

Blend all the ingredients together until creamy. You can add more vanilla powder to make a richer smoothie.

Mystery Smoothie

INGREDIENTS

1-1/2 to 2 cups soy milk, rice milk, or juice
1/2 cup blueberries or mixed berries, fresh or frozen
1/2 banana, fresh or frozen
1/2 cup chopped mango, peaches or apricots, fresh or frozen
1-2 teaspoon agave nectar or maple syrup
1 teaspoon carob powder (optional)
1 teaspoon nutritional yeast (optional)
1 teaspoon pure vanilla extract 1/2-1 cup packed fresh spinach or swiss chard leaves, washed and well-drained

DIRECTIONS

Blend all ingredients together in a blender until smooth and no specks of the greens remain. Pour into glasses immediately and enjoy!

4-6 servings.

Nectarine Nelly

INGREDIENTS

One and one-fourth (1 1/4) cups of Orange Juice (organic)
Two (2) cups diced fresh Nectarines, frozen (organic)
One (1) cup diced fresh Mango, frozen (organic)

INSTRUCTIONS

Pour the juice into a blender. Add the nectarines and mango. Blend until smooth.

Pineapple-Mango Delight

INGREDIENTS

One cup fresh pineapple chunks
One cup mango chunks
One cup orange juice
One-half cup crushed ice

DIRECTIONS

Preheat oven to 375F degrees. Have a 6-hole muffin tin generously oiled and ready. In a bowl, mix all dry ingredients. Add almond milk and stir gently until just absorbed. The batter will swell and become fluffy. Be sure batter is not too thick or the muffins will be dry. If the batter is too thick, add almond milk, one tablespoon at a time. Spoon batter into the muffin tin. Bake for 30 minutes (check on progress after 20 minutes), until the tops turn light golden brown. Once baked, the muffins should easily lift out of the tin with a dinner knife. Place the muffins directly into a large serving bowl. Cover with a clean, unscented cloth to keep them moist and warm until served.

Pour orange juice into blender. Next add pineapple and mango chunks to blender. Lastly, add ice to blender. Puree until smooth.

Serves 1-2

Banana-Blueberry Smoothie

INGREDIENTS

1 medium banana, broken into several pieces
1 cup blueberries (organic, fresh or frozen)
1 tablespoon maple syrup or brown rice syrup
6 to 8 ounces vanilla soy yogurt or crumbled silken tofu
1 cup white or red grape juice, or other juice of your choice

DIRECTIONS

Combine all the ingredients in a food processor or blender and process until smoothly pureed. Or place in a container and process with an immersion blender. Serve at once in tall glasses.

Pumpkin Pie Smoothie

INGREDIENTS

1/2 cup canned pumpkin
3/4 cup non dairy milk of your choice
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
Your favorite sweetener to taste
4 ice cubes

DIRECTIONS

Combine all ingredients in a Vitamix or other blender and puree until smooth and creamy. Pour smoothies into two glasses and sprinkle with a bit of nutmeg and or cinnamon.

Spicy Raspberry Rainbow

INGREDIENTS

One (1) cup frozen raspberries
One (1) ripe banana
Two (2) medium-size, ripe peaches
One-half (1/2) to 1 teaspoon fresh ginger
One (1) cup coconut-fruit blend juice
One (1) tablespoon sweetener (maple syrup or agave nectar)

DIRECTIONS

Peel and grate a tad of ginger. Peel fresh peaches and slice. Combine with raspberries, bananas and coconut juice in blender and puree smooth. Drink immediately.

Pumpkin Pie Delight

INGREDIENTS

One (1) cup of pumpkin meat (from organic pumpkin fruit)
One (1) cup of dairy-free ice cream (i.e. Rice Dream, Coconut Bliss)
Two (2) tablespoons of maple syrup
One-fourth (1/4) teaspoon of nutmeg
One-eighth (1/8) teaspoon of cinnamon
One-fourth (1/4) teaspoon of vanilla extract (alcohol free)
One-half (1/2) cup of ice

DIRECTIONS

Pour all contents into blender and puree or blend for 30 seconds or until smooth consistency. Pour into glass or cup of your choice and enjoy!
