Following a few recipes that have been recommended here on this site. I started with a delicious fettucini dish:


 
I used this recipe from this site (recommended by my man Coolbgdog1...thank you): http://www.rawglow.com/recipes.htm

Ingredients

4 small or 2 large zucchini spiralized into thick noodles
4 manila mangos diced
1 ripe lemon juiced
2 tablespoons tahini
1 fourth cup water
chopped mint leaves
black sesame seeds for garnish

Spiralize zucchini with the thick noodle setting with the spiral slicer* or use a vegetable peeler to make fettuccine type noodles. To make the sauce add mangos, tahini, water, and lemon juice to blender and blend until smooth. Top the zucchini noodles with sauce and garnish with chopped mint leaves and sesame seeds.

I used a vegetable peeler to make the fettucini noodles. Now, I left out the mint leaves and sesame seeds. And I had to spice it up a little. I added some Vegesal (sp), ginger powder, sage, basil, celery seeds, and thyme. I used too much water too. LOL It kept looking too thick, so I added another half cup, but it was unnecessary. Next time, I think I'll add some fresh ginger to the sauce to give it a nice spicy kick. Sweet and spicy with the mango...mmmmm. In spite of the sauce being thin, this dish turned out to be delicious. My sad eaters agreed.

Next up was my Kiwi Pie...recipe found courtesy of my man Curtis Duncan. Gratitude to you. http://www.stevepavlina.com/blog/2009/06/how-to-make-a-raw-fruit-pie/



So, I used kiwi as my fruit and replaced the lemon with lime (I'm such a deviant lol). I chose pecans for my crust. I haven't tasted the pie as a whole yet, but I did nibble a bit of the crust and the filling separately. And let me tell you something right now!!! LOL...so yummy. Oh! Your slice is in the mail, Curtis.  Wink lol

So I followed that up with a kicking guacamole which I comprised from a few different recipes I found on the web. I used:

3 Avocados
*some* Cilantro (Lol...some...I didn't measure...but I love cilantro so I was generous with it)
About a half of onion
2 Roma Tomatoes
1 Lime (the juice)
Sea Salt to taste
Cayenne to taste

Yummy yummy yummy for my tummy! This is some of the best guacamole I've ever had. And not just because I made it. Again, my sad eaters raved about it.



After that I moved on to this heavenly, yes heavenly (just b/c I love chocolate so much), brownie recipe, again courtesy of Coolbgdog1. All I can say is thank you thank you thank you! OMG.



Ingredients

brownie:

1 c walnuts
1 c dates
1/4 c cocoa pwd.

Directions for brownie mixture:
Food process the brownie ingredients until blended and dry chunky.
Press into a small pan, put aside.


Icing:
2 avocados
1/3-1/2 c agave nectar
1/4 c cocoa pwd
2 T coconut oil
1 T vanilla extract
dash salt
dash cinnamon

Directions for icing:
Put all icing ingredients into blender or food processor, and blend on hi till smooth
Spread icing over brownies and pop in freezer to set for 1 hr. then cut into 12 pieces.

So with this recipe, I doubled up the brownie part. I used 2 cups of walnuts, 1 cup of dates, a half cup of raisins and a half cup of dried apricots. I had to use the raisins and apricots b/c I didn't buy enough dates. I didn't read the whole pie recipe and didn't know I'd be using dates for the crust and the filling. Improvisation baby! These brownies were so [expletive] good!!!! Omg. Again, my sad eaters agreed.

For the icing I pretty much followed the recipe. I used 1/3 cup maple syrup though. When I tasted it, I thought I would pass out. LOL I wanted to fight myself it was so good! I was accusing myself of putting msg and refined sugar in it and everything. Mmm mmm mmm! Now once I spread the icing, I put it in the fridge and have yet to taste it, but I already know!! Now, no one tasted the icing except me, but it's for the best cuz they would tear through it...and then go eat some sad shit while all my raw delicacies were gone. That icing was so good, I could double up on the recipe and eat it as chocolate pudding. MMMMmmmm

So that was my rawsome day. LOL After all that, I was too tired to eat and just whipped up a quick smoothie (this idea came from my girl Knix...thank ya much!): some spinach, 2 bananas and a scoop of cacao powder. Now I'm all up and full of energy. Can't wait to feast tomorrow! I hope y'all can see the pictures.

How did you get the brownies to become solid? did you put it in the fridge? then put the icing?

Aww man...I don't know why my pictures won't upload. Yeah I had a slice of pie a few minutes ago. Actually 2 slices. LOL It's soooo good!

How did you get the brownies to become solid? did you put it in the fridge? then put the icing?

The brownies just came out that way. They held together well, and I just pressed them down into the pan. I could've eaten it just like that, but I figured I did all this, might as well make the icing. Now after I spread the icing, I just put it in the fridge. The recipe said to put it in the freezer for an hour, but I was on my way to bed and I figured it would have the same effect. We'll see when I test them out in a little while. I'm expecting euphoria. LOL

Yes, then definitely be sure to make the icing!!!! Even if you kind of like chocolate just a little bit sometimes...you will love this icing!! I licked the spatula clean, then went for the blender and the blades. lol

I love quick easy recipes like this that don't require 2 thousand ingredients and 10 machines to make!

You welcome! Damn I aint' make those brownies in a while! Grin  When I made them, I didn't even make the icing, the brownie itself was delectable.  I remember bringing them to my job one time and everybody didn't want to taste them(the look was gross to them but hell I aint' Rachel Ray) but one girl tasted them and thought they was good as hell.  I want to make that raw fruit pie too.  I want to see those pictures.

Yeah, those brownies are great!!!  After coolbg posted the recipe i made them for some students i taught at an after school program and they were scared to try them too - i must admit they looked disgusting and i used raisins instead of dates so they were a bit ugly - but some of the boys finally gave in and they really liked them.

Yeah, I guess the brownies aren't the most visually stimulating food in the world...but them thangs sho is good! LOL So I got to eat them with the icing earlier and yeah...I went to heaven and back. lol

Oh and I forgot to mention about the pasta...I also added some diced red and green bell peppers and mushrooms. Gave it a little extra umph and texture as well.

So, I whipped up another recipe today. I tell you once I start, I can't stop. lol
Following a recipe found in The Joy of Living Live: A Raw Food Journey by Zakhah:

Candied Yams

4 small Yams, thinly sliced rounds using mandolin
1/4 cup Sesame Oil, cold pressed
1/8 teaspoon freshly grated Nutmeg
1/4 teaspoon Cinnamon
1/8 teaspoon Vanilla Bean Seeds
1 medium Orange, juiced
1 teaspoon Orange Peel, ground
1/2 cup Maple Syrup

Marinate yams in remaining ingredients for at least 8 hours. Stir and serve

So my variation (cuz you know I can't follow a recipe lol) was as such:

I used 1 large yam and I sliced it up with a vegetable peeler. Gotta use what I have and I don't have a mandolin.
1/8 cup coconut oil...now why the hell did I do that? Well because it's sweet, but it didn't dawn on me til it was too late that coconut oil hardens when it gets under a certain temperature. I'd mixed up the marinade first and put it in the fridge while I sliced up the sweet potato. When I went to take it out the lightbulb went off...that's why they said sesame oil lol....oh well.
I used a dash of powdered ginger in place of the nutmeg...just to give it a little spice
Stuck with the 1/4 teaspoon of cinnamon
I used 1/8 teaspoon Vanilla extract, not bean seeds
I squeezed a half of a lemon instead of orange
Didn't used the orange zest
And 1/4 cup maple syrup

Now I haven't tasted it all together yet b/c it's still marinating. I did sample a bit of the marinade though, and it is off the hook! Can't wait to see how the finished product turns out!

Yes! They were so good. I'm going to try a sweet potato pie today. I bought a jicama too, so I'ma play around with that and see what I come up with. I asked the stocker at whole foods where I could find a 'jah comma', he was like a 'hee kuh muh'? I was like yeah that. LOL

LOL @ jah comma...yeah there are so many ways people pronounce jicama, it's a trip. I was going to experiment with that recently, but went out of town and it got too soft, never bought another one. I'm sure all that creativity you have going on there will help you come up with something awesome and tasty! I'm glad u mentioned it. I think I'm going to go get one tomorrow and come up with some type of sauce or something to make with it. Just random....

LOL I'm just glad he corrected me. I would've been sounding real dumb at somebody's raw potluck raving about my delicious juh comma recipe! All I did was slice it (like fries) and season it. I had a taste for something spicy so I sprinkled on some vegesal, onion powder, ginger powder, and cayenne. Spicy it was! LOL

A sauce sounds good! I would love to hear how it turns out.
