Becoming Vegan by Brenda Davis and Vesanto Melina

I have noticed a lot of people posting about becoming vegan and/or changing their eating habits. This book covers nutrition, feeding children a plant-based diet, older adults, weight issues (overweight & anorexia), and social aspects of veganism.

Highly recommend, especially for starters.

Oh and the same authors have a book called Becoming Vegetarian with pretty much the same type of information, for those not making the transition to a fully plant-based diet.
