COOKING TIPS & RECIPES

Thai Lettuce Wraps

Ingredients:

  • 1 1/2 cups Walnuts
  • 1/2 cup celery, diced
  • 1/2 cup diced carrots
  • 1/2 red bell pepper, diced
  • 1/2 cup fresh Cilantro,minced
  • 1/4 cup Scallions, minced (greens only)

Ingredients for Sauce:

  • 1/4 cup raw wild honey
  • 1/8 cup Nama Shoyu
  • ½ teaspoon fresh garlic, minced
  • 1 teaspoons fresh ginger, grated
  • 1 Tablespoons hulled sesame seeds
  • 1 Tablespoons Sesame Oil
  • 1 teaspoons red pepper flakes

Garnish:

  • 1 head of Lettuce, Butter, Bib, or Romaine
  • Mung Bean sprouts
  • Carrot, grated

Directions:

Gently pull apart lettuce leaves, wash and let dry on paper towel.

Prepare the sauce in a food processor fitted with an s-blade by adding all ingredients and pulsing 3-4 times.

Add walnuts to the processor and pulse 4-5 times until meat of walnut is the consistency of ground meat.

Add vegetables to processor and pulse 3-4 more times until all ingredients are incorporated.

Place 2-3 lettuce leaves on plate, scoop 2-3 tablespoons of walnut meat mixture in to leaf.

Garnish with Mung Beans, and grated carrot.

I am not sure if I am looking to go vegan, but I am doing the weight loss cleanse and do feel a difference in my body. My question is how do I keep up eating raw without getting bored? Can you recommend meal replacements and exercises.

You should absolutely consider going vegan for your long term health, the health of the planet, and of course sparing countless animals from suffering. I have been vegan for over five years and they have been the best of my life! My health program www.theveganeffect.com is a huge success!

With that being said, the best way to keep from getting bored is to eat a variety of fruits and veggies. The main meals of a basic raw food eater is smoothies, soups, collard green wraps, and raw pasta made with zucchini instead of pasta.

"The last time I checked, birthday cake was for birthdays, and birthdays come once a year," says endocrinologist Robert Lustig, MD, author of Fat Chance: Beating the Odds Against Sugar, Processed Food, Obesity, and Disease. But added sugar is infiltrating the food supply, and we're not just talking soda here. Food manufacturers pump excess sugar into an array of foods—even "health foods"—creating catastrophic health results. Learn where this type of sneaky sugar hides, along with these surprising sugar side effects.

You're overdosing on it.
The Facts: Americans swallow a whopping 13 percent of their daily calories from added sugars. That adds up to about 130 pounds per year. Break that down to the daily level, and we're way over the limit, downing the equivalent of 22 teaspoons of added sugars a day. According to the American Heart Association, women should max out at the equivalent of 6 teaspoons of added sugars daily; men should stop at 9.

We can't completely blame the fast-food industry, either. A recent National Health and Nutrition Examination Survey report found the majority of added sugar intake—67 percent—occurred at home.

Where Sugar Lurks: Salad dressings may not taste sweet, but the food industry often adds sugar to low-fat versions to make them more palatable. Try vinegar and olive oil instead. While shopping, look for brands like Organicville that are made with no added sugars.

Amazing Alliums

More than 1,000 plant varieties are found in the allium family, which includes garlic, onions, leeks, chives and several decorative flowers. Alliums have been cultivated for decorative and edible uses as far back as 1594, and wild varieties have been foraged for millennia. The allium family provides at least one of the staple foods in nearly every culture, as onions, garlic and their relatives often provide depth to nearly any savory (and some sweet) dish. Alliums are a fairly easy-to-grow plant variety that do well in most climates as they are hardy and the underground bulbs can take over-winter freezes. They like well-drained and slightly fertile soil, but can take clay soil quite well. Most alliums can be planted in the spring (May is still doable) for fall harvest/blooms in the later summer or early fall. Full sun is best for all allium varieties, so make sure to plant them in open, south-facing areas of the garden.

Aside from keeping your beds weed free, alliums are fairly low maintenance, although light fertilization and mulching will give you greener stalks and larger flowers. Garlic is very easy to plant - just let your garlic cloves or shallots sprout, plant them in the garden and you’ll have beautiful cooking ingredients in six-months time! Garlic planting should ideally happen in the early fall, several weeks before the first frost, but can also be planted in the spring. If heavy overwinter frosts are anticipated, the garlic should be mulched with straw or low acidity wood shavings.
